Ingredients
12 passion fruits, seeded and pulp removed
250 g passion fruit flesh (can use frozen)
250 g granulated sugar
2 tbsp fresh lemon juice
300 ml filtered water
1 tsp butter (optional)
250 g preserving sugar (optional, for thicker consistency)
½ tsp pectin powder (optional, for extra stability)
Instructions
Scoop out the pulp and seeds from the passion fruits
Measure the passion fruit flesh to obtain 250 g
Squeeze 2 tbsp of fresh lemon juice
Combine the passion fruit pulp, flesh, and water in a saucepan
Add granulated sugar and lemon juice to the saucepan
Bring to a gentle boil over medium heat, stirring continuously
Reduce heat and simmer for 20-30 minutes until thickened
Add butter to reduce foam, if desired
If using pectin, stir it in a few minutes before the jam finishes cooking
Transfer the hot jam into sterilized jars and seal tightly
Notes
Use fresh passion fruit for the best flavor
For a thicker consistency, use preserving sugar instead of granulated sugar
If using pectin, ensure it is alcohol-free
Store in airtight containers in the refrigerator for up to 3 weeks or use canning methods for longer shelf life
