Ingredients
Halloumi cheese 8 ounces
Watermelon 3 cups
Fresh mint leaves ¼ cup
Lime juice 3 tablespoons
Olive oil 2 tablespoons
Honey or agave syrup 1 tablespoon (optional)
Salt and pepper To taste
Skewers 6–8 (soak wooden skewers for 30 minutes)
Instructions
Slice halloumi into ½-inch thick pieces
Cube watermelon into 1-inch chunks
Finely chop mint leaves
Whisk lime juice, chopped mint, olive oil, honey/agave (if using), salt, and pepper into a drizzle
Alternate threading halloumi and watermelon onto skewers (4-5 pieces per skewer)
Preheat grill to 400°F
Brush skewers lightly with olive oil
Grill for 2-3 minutes per side or until halloumi develops golden char
Serve immediately with mint lime drizzle
