Ingredients
2 cups shredded cooked chicken
0.5 cup BBQ sauce
2 tbsp hot honey (mix honey with hot sauce if needed)
8 large flour tortillas (whole wheat optional)
3 cups cheddar and Monterey Jack cheese blend
0.25 cup diced red onion
2 tbsp butter (or olive oil)
Sour cream or Greek yogurt (for dipping)
Ranch dressing (for dipping)
Fresh cilantro (optional, for garnish)
Instructions
Combine shredded chicken, BBQ sauce, and half the hot honey in a bowl.
Heat Blackstone griddle or skillet over medium heat, add melted butter.
Place 4 tortillas on griddle, sprinkle 1.5 cups cheese on each.
Layer chicken mixture and red onion, add another 1.5 cups cheese.
Top with remaining tortillas to form 4 sandwiches. Press gently.
Cook 3–4 minutes per side until golden and bubbly.
Remove, drizzle with remaining hot honey, garnish with cilantro (optional). Serve with sour cream/ranch.
Notes
Use vegan cheese for dairy-free option
Lettuce, tomatoes, or pickled jalapeños add freshness
Substitute fat-free Greek yogurt for dairy-free sour cream
