Ingredients

Scale

¼ cup olive oil
3 tablespoons fresh lemon juice
4 garlic cloves, minced
2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)
1 tablespoon Dijon mustard
1 tablespoon honey
1 teaspoon salt
½ teaspoon black pepper
¼ teaspoon red pepper flakes (optional)


Instructions

Whisk together olive oil, lemon juice, and Dijon mustard in a bowl
Add garlic, rosemary, honey, salt, pepper, and optional red pepper flakes
Taste marinade and adjust seasonings if needed
Pat lamb dry with paper towels
Place lamb in a resealable bag or dish
Pour marinade over lamb and massage to coat evenly
Refrigerate for at least 2 hours (preferably overnight)
Remove lamb 30 minutes before grilling
Scrape off excess marinade before grilling
Grill lamb: chops 3-4 minutes per side, leg of lamb 15-20 minutes total

Notes

Substitute lime juice for lemon
Use roasted garlic for a milder flavor
Maple syrup can replace honey for a halal alternative
Store unused marinade in a sealed container in the fridge for up to 3 days
