Description
Soft peanut butter cookies with a molten chocolate truffle center and a smooth caramel drizzle, perfect for parties or a cozy night in.
Ingredients
1/2 cup creamy peanut butter
1/4 cup unsalted butter, softened
1/2 cup brown sugar
1 large egg
1/2 tsp vanilla extract
1 cup all-purpose flour
1/2 tsp baking soda
4 oz semi-sweet chocolate
2 tbsp heavy cream
1/2 cup granulated sugar (for caramel)
2 tbsp butter (for caramel)
1/4 cup heavy cream (for caramel)
Instructions
1. Cream peanut butter, butter, and brown sugar until smooth
2. Add egg and vanilla, then mix in flour and baking soda
3. Chill dough for 30 minutes
4. Melt chocolate with 2 tbsp cream; chill until firm enough to roll
5. Wrap a tablespoon of dough around each truffle and roll into balls
6. Bake at 350°F for 10–12 minutes; cool completely
7. Make caramel by melting sugar until amber; add butter and cream
8. Drizzle caramel over cookies and let set
Notes
You can freeze unbaked or baked cookies for later use
Add a pinch of sea salt to the caramel for a salted finish
Use dark chocolate for a richer truffle center
