Ingredients

2 large eggs

¼ ball fresh burrata cheese, torn into pieces

1 tablespoon olive oil or butter

Salt and freshly ground black pepper, to taste

Fresh basil or chives, for garnish

Optional: ½ cup cherry tomatoes, halved

Optional: 1 tablespoon pesto or chopped fresh herbs


Instructions

1. Whisk the eggs in a bowl with salt and pepper.

2. Heat a nonstick pan over medium-low heat, add olive oil or butter.

3. Pour the eggs into the pan, gently pushing the edges toward the center as they cook.

4. When eggs are mostly set but still soft on top, scatter the burrata over one half of the omelette.

5. If using tomatoes or pesto, add them now.

6. Fold the omelette over the filling and let cook for 30 seconds more.

7. Slide onto a plate, garnish with herbs, and serve immediately.
