2 tablespoons Homemade Italian Seasoning (oregano, basil, rosemary, thyme)

2 teaspoons fennel seeds, whole or lightly crushed

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon crushed red pepper flakes (adjust to taste)

1/2 teaspoon ground coriander

1/4 teaspoon ground nutmeg (optional)


Instructions

1. In a small bowl, mix all ingredients together until well combined.

2. Optional: Lightly crush fennel seeds with the back of a spoon for extra flavor.

3. Store the seasoning in an airtight container in a cool, dry place.

4. Use 1 to 1 1/2 tablespoons of seasoning per pound of ground meat.

Notes

For sweet Italian sausage, omit red pepper flakes and add a pinch of brown sugar.

For spicy Italian sausage, increase the red pepper flakes or add cayenne pepper.

Works great with ground pork, chicken, turkey, beef, or lamb.

Sprinkle on roasted veggies, potatoes, or soups for extra flavor.
