Description
This edible chickpea cookie dough is a healthy, plant-based treat made with simple pantry ingredients. Ready in minutes and safe to eat raw or bake into cookies.
Ingredients
1 ½ cups cooked Chickpeas (or 1 can, drained)
¼ cup Nut or Seed Butter (peanut, almond, or sunflower)
1 tsp Vanilla Extract
3 tbsp Oat Flour or ¼ cup Almond Flour
2 tbsp Maple Syrup (plus more to taste)
¼ cup Dairy-Free Chocolate Chips
½ tsp Salt
Instructions
1. Add all ingredients except chocolate chips to a food processor.
2. Blend until smooth and creamy, scraping down the sides.
3. Taste and adjust sweetness if needed.
4. Transfer to a bowl and fold in chocolate chips.
5. Serve immediately or chill.
6. Optional: Scoop onto a baking sheet and bake at 325°F for 8–10 minutes.
Notes
Store in an airtight container in the fridge for up to 5 days.
Freeze for up to 3 months.
