Ingredients
2 large carrots, peeled
½ small red onion, sliced (or 2 green onions, diced)
3 tablespoons toasted white sesame seeds
1 tablespoon good quality olive oil
½ teaspoon toasted sesame oil (or more to taste)
½ small lime, juiced
¼ cup fresh cilantro, finely chopped
optional: 1 large clove garlic, grated
drizzle of tahini
drizzle of pure date syrup
¼ teaspoon salt (or more to taste)
Instructions
1. Peel the carrots and use a vegetable peeler to make long ribbons.
2. Thinly slice the onion.
3. Combine all ingredients in a mixing bowl.
4. Toss until everything is evenly coated.
5. Drizzle with tahini and date syrup.
6. Adjust salt and lime to taste.
7. Serve immediately while cold.
Notes
Use a mandoline for even onion slices.
Chill the salad 20 minutes for deeper flavor.
Add chickpeas or tofu for a full meal.
